Sodium bicarbonate

Sodium bicarbonate is a mild alkaline salt used as a leavening agent, acidity regulator and carbon dioxide source in foods. Reaction with food acids releases carbon dioxide, which expands doughs and batters or generates effervescence. Its bicarbonate buffering behavior also allows controlled adjustment of acidity in suitable formulations.

The food-grade powder dissolves in water and is normally blended with dry ingredients or added to an aqueous food system. In bakery formulations it is paired with an appropriate acid source when neutralization is needed to develop gas and control residual alkalinity. It differs from sodium carbonate in alkalinity and from ammonium bicarbonate in leaving a nonvolatile sodium-containing residue.

Typical Applications

• Baking powders and bakery premixes: Used as the bicarbonate component alongside leavening acids. Mixing and baking trigger carbon dioxide generation, helping cakes, biscuits and other designated products develop their intended volume and texture.
• Effervescent food and beverage preparations: Used with compatible food acids in dry products designed to release carbon dioxide when water is added. The acid-bicarbonate reaction produces the intended fizz.
• Food acidity adjustment: Used in suitable food processes to moderate acidity or establish a mildly alkaline environment. The role is pH control within the recipe rather than the high-alkalinity cleaning function of soda ash.
