Chemical Product Description & Applications

Disodium phosphate anhydrous is a water-soluble phosphate salt used for buffering, acidity adjustment and protein-system control in food formulations. Its phosphate equilibrium helps establish a controlled pH environment. Interaction with calcium is useful in dairy systems, where mineral balance influences protein dispersion, heat response and texture.

The anhydrous powder supplies more phosphate salt per unit mass than hydrated disodium phosphate grades. It is commonly dissolved in the aqueous portion of the recipe or incorporated into a phosphate blend. In processed cheese and dairy beverages, it functions within a wider mineral and protein balance rather than acting as an oil-soluble emulsifier. The powder format allows accurate incorporation of the phosphate component during dry blending or solution preparation.

Typical Applications

  • Processed cheese phosphate systems: Used as a component of emulsifying-salt blends that regulate calcium-protein interactions. This helps disperse casein and develop a uniform cheese mass during processing.
  • Dairy beverage stabilization: Used in suitable milk-based beverages to adjust pH and mineral balance. Its role is to support protein-system behavior during the selected heat treatment and storage conditions.
  • Food buffer blends: Used with other phosphate salts to prepare defined acidity-control systems for food manufacture. The blend composition establishes the working buffer range and phosphate contribution.
